DOUBLE SECRET CHOCOLATE CHIP COOKIES

Let me tell you a story. I've read a lot of different recipes online, and lots of them come from blogs. The blogger writing the recipe always includes some flowery story about how they discovered a unique combination of flavors at their cousin's nephew's mother's gym coach's third wedding when someone dropped potato salad on the cake. They often include tangents about how they got stuck in traffic on the way there, and/or a charming anecdote about how one of their kids managed to kick one of their own teeth out.
This is a cookie recipe. That's it. No flowery story or goofy anecdote. OK, there was this two paragraph intro, but THAT'S it.
OVEN: 325 degrees F.
- 2 cups all-purpose flower
- 1/4 tsp baking soda
- 1/2 lb (2 sticks) butter, softened
- 1/2 cup granulated white sugar
- 1/2 cup brown sugar
- 1/4 cup peanut butter (SPOILER ALERT! This is a secret ingredient.)
- 1/4 cup honey (SPOILER HERE! This is also a secret ingredient.)
- 2 eggs (SPOILER! These ... are eggs.)
- 1/2 tsp vanilla extract
- 1/3 cup chocolate chips
1 • In a stand mixer, combine butter, sugar, brown sugar, peanut butter, and honey. Set the mixer to medium speed and let it mix for at least 2 minutes (or however much time you need to do step 2), scraping the sides of a bowl if there's stuff that doesn't want to mix. Avoid scraping the bowl while the mixer is running.
2 • In a bowl that will fit it, whisk flour, baking soda, and salt until it's combined. How do you know it's combined? Beats me, all those ingredients the same darned color.
3 • Set the mixer to slow speed and add the eggs to the stand mixer mixture one at a time. Add the vanilla extract, as well.
4 • Scoop the flour mixture into the stand mixer mixture and continue mixing on low. Stop the mixer as soon as everything is incorporated together (if you see bits of flour in the mixer, keep going).
6 • Drop 1/8 cup drops of cookie batter on an ungreased cookie sheet, 2 inches apart. Bake for 11 minutes or when the cookie bottoms brown and the tops are solid when you touch them. Remove cookies from oven and let set away from heat for 10 minutes. Transfer to a wire rack or your mouth.
Makes ~60 cookies. I ate a few while writing this.
PS: For those of you who want a story, here's one: my kid really did kick her own tooth out. So I made her these cookies. Ta ta!
